Job Description

Chef Dominique Crenn, the trailblazing force behind Atelier Crenn and a global icon in culinary innovation, is bringing her boundary-pushing culinary artistry to Los Angeles. Poised to be one of the most anticipated openings of 2025, this new concept will redefine fine dining in LA through innovation, elegance, and hospitality at the highest level. We are building an extraordinary team to launch this landmark project—and are seeking an experienced and driven Assistant General Manager to help bring it to life.

As Assistant General Manager, you will play a critical role in shaping the guest experience and ensuring seamless front-of-house operations. Working closely with the General Manager, Executive Chef, and ownership team, you’ll help build, lead, and inspire a team dedicated to excellence in every detail—from service to ambiance to guest engagement.

Key Responsibilities:

Pre-Opening & Launch Strategy

  • Assist in the development and implementation of service standards, guest experience protocols, and operational procedures prior to opening.
  • Recruit, train, and mentor a highly skilled front-of-house team, instilling a culture of excellence, precision, and refinement.
  • Collaborate with the Executive Chef, Sommelier, and ownership team to ensure a seamless alignment between service, cuisine, and beverage programs.
  • Oversee pre-launch training programs, ensuring staff are well-versed in menu knowledge, tableside etiquette, and fine dining service techniques.
  • Assist with restaurant setup, floor planning, and table arrangements, ensuring an elegant and efficient flow of service.

Service Excellence & Guest Experience

  • Lead the front-of-house team in delivering a seamless and sophisticated dining experience, setting a gracious and polished tone from opening day forward.
  • Oversee table management and dining room operations, ensuring impeccable timing and flawless execution.
  • Serve as a refined ambassador of hospitality, engaging with guests, anticipating their needs, and ensuring a personalized and memorable experience.
  • Handle VIP relations, special requests, and service recovery with discretion, professionalism, and warmth.

Leadership & Team Development

  • Foster a culture of precision, elegance, and teamwork, ensuring every team member upholds the highest standards of hospitality.
  • Conduct daily pre-service briefings, reinforcing menu changes, service techniques, and guest expectations.
  • Maintain and enforce impeccable grooming, posture, and etiquette standards for all front-of-house staff.
  • Lead by example, demonstrating composure, attention to detail, and an unwavering commitment to excellence.

Operational & Financial Management

  • Oversee floor operations, ensuring smooth coordination between front- and back-of- house teams.
  • Assist in monitoring financial performance, analyzing sales, labor costs, and operational budgets to optimize efficiency without compromising quality.
  • Work closely with the General Manager and ownership to refine strategic initiatives that enhance the restaurant’s reputation and guest experience.
  • Ensure strict compliance with health, safety, and service regulations, maintaining the highest level of integrity and excellence.

Qualifications & Experience

  • Minimum 3+ years of leadership experience in a Michelin-starred restaurant, with experience in pre-opening operations preferred.
  • Strong knowledge of gastronomy, classical and modern fine dining service techniques, and guest engagement strategies.
  • Sophisticated, polished, and articulate demeanor, with exceptional interpersonal and communication skills.
  • Ability to remain calm, poised, and solution-oriented in high-pressure service settings.
  • Experience working with prestigious reservation platforms, POS systems, and guest CRM tools.
  • Certification in hospitality management or wine (WSET, CMS, or equivalent) is a plus.
